Jasmine
rice is originally from Thailand, also called fragant
rice or "Hom Mali" rice. Thai Jasmine
rice belongs to the long-grain category that when
cooked are soft and cling to each other and could
be divided into 4 categories: Kao Dok Mali 105,
Go Kho 15, Klongluang, and Suphan. The grains of
Jasmine rice appear silky, smooth, and shiny. When
cooked, Jasmine rice produces an elegant aroma. |

White
rice belongs to the long grain category. It is also
known as polished rice or fully milled rice because
most of the outer layers--the husk and the bran
layer--are removed from the kernel, through the
milling process. |

| Brown
Rice |

Similar
to White rice, Brown rice belongs to the long-grain
category. When the hull is removed from rough rice
it is known as brown rice. However, not all rice
with the hull removed is brown in color. The bran
and germ that gives brown rice its color can vary
from light yellow to red to dark purplish black.
Rice bran and germ contains greater amounts of dietary
fiber, vitamins, minerals and other health-related
components than the white center portion of the
kernel (endosperm). |

Glutinous
rice, also called sticky rice, sweet rice, or waxy
rice, consists of amylose and amylopectin starch
and when cooked, rice will stick together. Its characteristics
are white, brown, and black. With a chalky white
texture, glutinous rice is often used in producing
starch and flour. |

Rice |

During
the milling process, Broken rice is separated from
the White rice, whose shape remains intact. In other
words, Broken rice is the demaged White rice and
is normally used in animal feeding or other food
& beverage processing, such as beer brewing
and flour processing. A grain of Broken rice gives
a low fiber texture and low nutrient level, while
retaining its high enery content. |
